Coconut Syrup Recipe

Okay, so EVERYTHING about Kauai was awesome in EVERYWAY!! But this morning I had one memory in particular come to mind. We were oh so lucky to have my sister Tawnya and Her hubby Mark with us for our entire Kauai week. We absolutely LOVED having them with us! Both Mark and Tawnya are two of the greatest people we know! I love them, Eric loves them and my kids LOVE LOVE LOVE them! One morning.....Due to some funny circumstances.....to long of a story.....but anyway, One morning, Eric and I were able to get Mark and Tawnya to ourselves. We drove to the other side of the island and ended up in this fun little restaurant for breakfast. Well they had tons of great stuff on the menu.... Eric had a seafood omelet, I think Mark had a omelet as well, and Tawnya and I had French Toast with Coconut Syrup and sprinkled with Macadamia Nuts..... YUMMMM YUMMMM YUMMMM!!!!
And I cant forget to mention that Mark and Tawny took care of the bill...DOUBLE SCORE!!!
So this morning I had a hankering for some coconut syrup. I went on line and found this recipe for Coconut Syrup... Today is Sunday so the stores here are closed. So tomorrow I'm heading to the store to buy me some coconut milk and macadamia nuts ... ooh yeah baby! I'm making my family French toast for breakfast this week!!!

Coconut Syrup: a recipe

Get together:

-1/3 cup water
-1/3 cup sugar
And put them in a pan on medium heat, stirring occasionally, to create a simple syrup.
Once it's reduced in volume roughly by half, take
-1 can of good quality (chaokoh brand is my fave) coconut milk, and strain out the water (save it), reserving the solids. (whatever won't drop right through the strainer.) Add it to the syrup, and whisk really well to get it smooth and mixed. Let it cook just until it's thick enough that you can see bare pan for a second as you draw a spoon across the bottom. Add
-just enough kosher salt to coat your fingertip and thumb tip, and
-1 teaspoon vanilla extract.

pour over French toast and sprinkle finely chopped macadamia nuts over the top
Enjoy!

ANOTHER CATCH YOU UP BLOG............

Yeah, I stink at blogging! Sometimes life just comes at you full throttle and you cant seem to find the time to sit down and ponder it!
We have had many moments come and go this Spring and many more we are anxiously awaiting!!.... Those who really know and love us know of all those moments and the details. Nothing beats a phone call, or even better a person to person visit! But blogging is fun and definitely a easy way to keep in touch with loved ones that we aren't lucky enough to live close to or see on a regular basis.
Ive kind of been turned off to the whole blogging thing to be honest, I just grew tired of the "CRAP" blogs! So.... My goal is to KEEP IT REAL!

Here are a few of our current life stories:

Aleah had a great school year - no more JR. High!! She will be entering the 9TH grade in the fall. I think she has found a good niche in this new area. I think she would go back to Jackson in a heartbeat but, for now this will do. She tried out for the school drill team and made it! Right now she is focusing on work, trying to earn lots of school clothes money, early morning dance practices, a few girl's camps and just having fun!

Eric is working hard as usual! I am so grateful for all he does for our family. He has been able to keep most of his weekends free which makes me happy.

Joyah is just that JOY-AHHH!! She has definitely brought some fun spice to our family and we are all enjoying her. She is by no means a easy child! The little thing kicks my butt just about every day! When were not keeping her out of bedrooms, bathrooms, off counter tops, out of fridges and any other conceivable mischief she is sleeping! I tell ya, Heavenly Father knew to save this one for me when I was a bit older! And that's all I have to say about that!

And Chance.... Well He will be leaving us in about 8 more weeks!! He has been called to serve in the Philippine's Iloilo Mission! He will be speaking Tagalog. We are so excited for him! It will be harder than I care to think about to see him go but we are so grateful for his desire to serve and cant think of anywhere else we would rather him be at this time. For those of you who would like to come to his farewell and listen to him speak, that will be July 25TH at 12:30 Here in our Ward House.

This past month we were able to take a trip to Hawaii as a family. We spent 7 days on Kauai and 5 days on Oahu! Eric and I had been planning and saving for this special trip for over a year and were so excited for it all to play out! What a wonderful trip it was! I just cant say enough about it! PARADISE! In every way!

Other than that, we are just living life, loving life and filling in all the gaps with life!
And so it goes.................
